Pineapple and Spam Curry

This is an incredibly simple recipe, with appended options for tarting it up.


1 tbsp cooking oil

1 can Spam, cut into 1/2” thick slabs

14 oz. coconut milk

Red curry paste to taste, about 2 tbsp

14 oz. can of pineapple, juice reserved

1 tsp fish sauce

Freshly cooked white rice

Salt


1. Get your rice cooking

2. Heat oil in medium pan

3. Fry Spam until nicely browned on both sides, then remove

4. Add coconut milk, bring to simmer

5. Add curry paste, fish sauce, and pineapple chunks

6. Add salt and reserved pineapple juice to taste, add Spam

7. Mix any remaining pineapple juice with 2 oz. dark rum and drink immediately

8. Eat curry over freshly cooked white rice


And if you want to complicate matters:


1. Fry garlic, lemongrass, and ginger before adding coconut milk, or add powdered equivalents after adding coconut milk

2. Add kimchi at the end

3. Add toasted cashews at end
